Looks like Buffalo's famous "Anchor Bar" is selling franchises.

Good for them. But there is a part of the story that dumbfounds me:

The state Department of Law has accepted the Anchor Bar's franchise offering, a key step in bringing the birthplace of the chicken wing -- Buffalo's most famous culinary creation -- other communities.

What the hell does the state have to do with it? Is there a crevice that the state's grubby little hands don't reach into?

I'm surprised to read this from you since you managed a McDonalds at one point in your life. Franchising is a special business arrangement that affords legal rights and responsibilities to both the parent corporation and the franchisee to facilitate and further their respective business interests. You need to register it with somebody just like you'd register a DBA at the county courthouse to legally be a sole proprietorship and benefit from that status.

Does this mean whenever I go out of town & order buffalo wings I won't receive a plate of shriveled pigeon wings laying in a puddle of red sauce that tastes like Tabasco mixed with fryer grease?

I find that BW3's around the country have pretty good wings.

National pizza chains have the WORST!

I can tell you from personal experience that the further you get from Buffalo, the worse the wings are. Chains & franchises are going to suck the same all over.
